Patty: That is why I use some almond/hemp milk, to help cut the richness. I think using a blend of milks makes it taste mildly of coconut, but the cinnamon really stands out in this one. :) Coconut milk makes for the creamiest dairy-free ice cream to my knowledge.

How strong is the coconut flavor? I love it, but my husband really doesn’t like coconut. Is there a replacement for coconut milk/cream when making creamy, non-dairy treats?

The coconut milk, do we use the entire can, or just the solid part? I ask because just last week I saw a recipe for strawberry ice cream that did not include the clear liquid.

Linda: Yes, you can definitely do that. I like to use the almond/hemp to cut the coconut flavor of the ice cream and balance it out a little, but it is delish either way! :)
