E-book Review: Baking with Quinoa

Do you know Alyssa Rimmer, aka The Queen of Quinoa? When it comes to creative cooking, Alyssa is definitely Queen Bee in the kitchen! Her gluten-free recipes are always given a healthy spin but still pack in a lot of flavor and great nutrition.

You can find dozens of tasteful and beautifully photographed recipes on her blog…but if you’re hungry for more, she just wrote an e-book: Baking with Quinoa.

The e-book begins with a primer on quinoa, its nutritional benefits, and a few helpful tips and tricks from Alyssa. And then come the recipes. They’re broken into four delicious categories spanning everything from cookies to cakes to breads, like the Sea Salt Quinoa Flatbreads pictured below.

I find that I feel best on a grain-free diet that’s overall lower in carbohydrates, but on occasion when I enjoy gluten-free whole grains, quinoa (which is actually a grain-like seed) is a special treat. I know I’ll definitely be turning to Alyssa’s recipes for inspiration in the coming year.

I love that Alyssa uses healthier ingredients in her baking beyond just quinoa. She also incorporates plenty of healthy fats from nuts, coconut oil, and avocados, and many “booster foods” like citrus zest and spices.

  3. Wow, I was also looking for recipes using Quinoa. I tried 1-2 times, but I was not successful. I think, I must try recipes by Alyssa. Thanks for posting this review.

    Hallie, I do not eat any grains, but I do eat the seed quinoa. Do you know if her recipes contain eggs? They are something else we avoid. Thanks!

  5. Hi Stephanie: Of the 25 recipes, I just did a quick count and 10 or so of them are egg-free.
