I’m sneaking in one last recipe before Christmas, and it’s a good one.
I deviated a little bit from my smoothie roots here and went for something a little more on the tart side. Frozen cranberries make this smoothie bloom with a rosy pink blush, while dates provide a little sweetness to counteract the cranberries’ tartness. Cinnamon for spice, orange zest for kick, coconut for garnish…what more could you ask for?
Enjoy this smoothie as a hydrating afternoon snack or a light Christmas Day breakfast if you’ve got a big day of feasting in store. Starting your day off with proper hydration will keep you feeling energized and glowy all day long, especially in winter’s dry weather. So drink up that water and slurp down those smoothies!
Snow came to Wisconsin last week in a BIG way. Like, an over-18-inches-at-once sort of way. I’m an ultimate winter wuss, so I’m doing my best to keep my spirits up despite The Snowpocalypse! Eating right, exercising, and staying busy over the holiday break with hobbies helps to keep me focused on the positive, wonderful things in my life instead of the not so welcome snow. I love that we’re having a white Christmas, but I would be quite content if it would all just melt away after the first of the year.
I have been blessed beyond measure this year, as I seem to conclude every year. I have an amazingly supportive family, friends all around the country who inspire me every day, good health, and a job that I love doing. In spite of the world’s many tragedies, I am blessed to be surrounded by others who encourage me to spread light in the world, to seek peace in the midst of chaos, to find joy in life’s small pleasures, and most of all to live each day with intention, purpose, and hope.
It shouldn’t take the holiday season to remind me to count my blessings, but sometimes it does.

Cranberries & Cream Smoothie
Makes 1 snack-sized smoothie
This sweet tart smoothie makes for a hydrating afternoon pick-me-up. Cranberries are an antioxidant powerhouse, so you’re getting great nutrition with every sip.
1/2 cup frozen cranberries
2 Medjool dates, pitted
2 tablespoons raw cashews
1/2 teaspoon ground cinnamon
1/2 teaspoon finely grated orange zest
1/2 cup water
Unsweetened shredded coconut, for garnish (optional)
Combine the cranberries, pitted dates, cashews, cinnamon, orange zest, and water in a high-speed blender (I use a Vita-Mix). Blend on high until creamy and smooth. Enjoy right away garnished with shredded coconut if using.
Tip: If you don’t have a high-speed blender, soak the dates and cashews in water for 6-8 hours (or overnight) to soften them. Then blend as directed with a regular blender.
