I am so excited to finally share this resource with you. It has been an absolute pleasure to create and I truly could not be happier with the end result. If you want to learn how to bake healthier at home, this is the book for you.
When I first went gluten- and dairy-free, I was stumped on how I would ever bake again without wheat flour, butter, and sugar. For a while I just swore off baking (especially after my first few attempts ended up in the trash before they’d even cooled). But with time and practice, I’ve come to learn that you really CAN bake your cookies and eat them too…even if you want them to be healthy.
Every recipe in this book is proof that gluten-free, dairy-free, soy-free, refined sugar-free baking can be every bit as delicious as the old favorites that we’re used to. Instead of my grandma’s classic chocolate walnut cookies, I make Chocolate Raisin Brownie Drops. Even though Mom’s chocolate chip cookies are off the table, I can enjoy Cookie Dough Squares or Nibby Cocoa Oatmeal Cookies instead.
With these 50 recipes, you’ll never have a craving that can’t be satisfied! Over half of the recipes are vegan and/or egg-free. Another 20+ are grain-free. When you get the book, you’ll also find a link inside to the special “virtual bakery,” a full-color photo collection of over half of the recipes in the book.
Super Healthy Cookies is designed for the baker at heart who wants to jump into the kitchen and whip up homemade treats with a healthier spin. I’ve developed the recipes to use no more than two gluten-free flours each (usually less and often flourless), so that you don’t have to stock a huge array of specialty ingredients in your pantry.

I’m really excited to see this! I like that you’ve tried to limit the number of GF flours you call for in order to keep inventory manageable. What kinds of sweeteners do you need for these recipes? Do a lot of them contain eggs? (I’m a vegan baker with a GF/DF friend. I just might have to get the book for her if there aren’t many egg-less recipes. It looks too good to pass up!) Thanks.

Moose: Sweeteners are maple syrup, honey, coconut sugar, and dried fruits like dates or figs. There are 30+ egg-free recipes.

Cindy: There are 14 nut-free recipes (do contain coconut, though), and more that could probably be modified to be nut-free.
