There are just a few weeks left of summer, which means that my Vita Mix and I are sprinting to the finish with lots of cool and refreshing smoothies to finish off the season strong. Even though I drink them year round, summer’s sunny skies and balmy breezes make them all the more satisfying.

My love for mangoes runs deep. I based this smoothie on the Tropical Mango Rice Porridge recipe from my book. It’s an indulgent favorite that I crave now and then, so I decided to turn it into a smoothie.
