I love it when I can fan open a paint deck and match the color of my breakfast to a vibrant Benjamin Moore shade of green. Blooming Meadow and Baby Fern came close, but so did Napa Vineyards. My favorite? Green Thumb.
The smoothie gets its vivid hue from a blend of spinach and avocado, much like my Green Creamsicle smoothie. But this one comes with a surprising twist: a hint of peppermint. On a whim last week, I added a splash of natural peppermint flavor to my green smoothie and loved the result. I imagine you could also throw in a handful of fresh mint leaves for the same kind of vibe.
Don’t overdo it on the peppermint, though, people. Start with less than you think you’ll want and work your way up. You want your smoothie to taste like breakfast, not toothpaste. Do yourself a favor and take it slow!
Of course, no mint smoothie would be complete without chocolate chips, right? Since I wanted to keep this recipe refined sugar-free (it was my breakfast, after all…) I garnished it with some crunchy raw cacao nibs and a little unsweetened shredded coconut. This smoothie is thick enough to eat with a spoon, just how I like them. The first few bites are the best because you get those nibs of bitter crunch with the each spoonful.
And if you’re thinking that it sounds really gross to eat spinach, avocado, banana, and mint all in one drink, I get it. Just writing that out actually made me second guess posting this recipe because it sounds so weird. But then I remembered that you don’t taste the distinct flavors of spinach and avocado at all in this smoothie. There’s no “vegetable” flavor. Pretty much the only thing you taste is sweet banana, crunchy bitter chocolate in those first few bites, and a refreshing but subtle note of mint.
Whoville or not, this is some fun food.
Mint Chip Smoothie
Makes 1 smoothie
Start with a scant 1/4-teaspoon of peppermint flavor and work up from there if you’d like a more minty smoothie. A scant 1/4-teaspoon will yield a smoothie that tastes lightly minty without being overpowering.
For the smoothie:
1/4 ripe avocado
1/2 medium frozen banana
2-3 ice cubes
1 cup fresh spinach
3/4 – 1 cup unsweetened almond milk or rice milk (or a blend of milk and water)
1/2 – 1 scoop plain protein powder of choice, optional
scant 1/4 teaspoon natural peppermint flavor (or to taste)
Scoop the avocado flesh into a blender or Vitamix. Add the banana, ice, spinach, almond milk, protein powder (if using), and peppermint flavor. Blend on high until creamy and smooth. (Add more almond/rice milk or water if you’d prefer a thinner smoothie.)
Pour into a glass and garnish with cacao nibs and shredded coconut.
