I’ve spent the better part of the last five days wrapped in the folds of my favorite sweater fighting a pesky case of the flu. You know the drill. Body aches, chills, creepy crawly skin, sore throat, zero appetite. In other words, no fun at all.
I had big plans for cooking up a new recipe for you over the weekend, but they quickly went south when the only thing that sounded halfway decent to me was a bowl of rice cereal and some scrambled eggs. But there’s a bright side to everything, right?
In the past few days, I’ve become much better acquainted with my juicer. I bought it last year shortly before Christmas. I’ve pulled it out a few times since, but honestly, it kind of intimidated me. While soups are a breeze and smoothies a no-brainer, pulling out that juicer sent me wandering into uncharted territory. How much juice will a carrot yield? What tastes bitter? What tastes sweet?
My temperamental tummy and lack of desire to eat urged me to give juicing a more committed whirl. I’ve come up with some blends that taste, even to my flu-ridden palate, very delicious. Refreshing and easy to digest, I’ve discovered that homemade juice is just what the doctor ordered when you’ve got a bug.
When I read recipes for fruit-based juices made predominantly from apples and oranges, I get dizzy just from the thought. Vegetable juices taste better to me and won’t spike my blood sugar, so I’ve been using them as the base for my drinks. This recipe is packed with flu-fighting ingredients like spinach, kale, ginger, and carrots, which all boast an impressive array of antioxidants. Half an apple lends just enough sweetness to help the juice go down nice and easy.

Green Flu-Fighter Juice
Serves 1 (makes about one cup)
2 cups spinach
1 large kale leaf
1 medium carrot
1 medium celery stalk
1/2 medium cucumber
1/2 medium apple, such as Gala or Fuji
1 (1/2-inch) piece fresh ginger root
Push all ingredients through juicer. Stir well and serve right away.
