Mighty Minestrone Soup
With soup season at its peak, what better time than right now to set supper on simmer and warm up with a bowl of nutritious minestrone?
You can find my favorite minestrone recipe over at The Balanced Platter—I’m a regular contributor. Of course, a soup like this simply wouldn’t be as tasty without a crunchy dipper, right?
These Crunchy Chili Chickpea Chips that I shared with you last week would pair wonderfully with the soup. Or you might like the grain-free Garlic Herb Crackers pictured below.
Head on over to The Balanced Platter for the soup recipe, and while you’re there check out a few other cold-weather comfort foods:
- Spatchcocked Chicken – sounds hard, but it’s not!
- Comforting Chicken Pot Pie – delicious and nutritious comfort food!
- Apple Pear Sauce – in three easy steps, I might add.
- One Pot Meals – so many fabulous ideas.

Soup and crispy crackers. What could possibly be better as our winter turns into spring, but our bones are still chilled from the cold?! Lovely, thank you!
This soup looks delicious. My children will not eat soup unless it’s pureed so they can’t see what’s in it. I puree my soups in a Food Processor, and if you’re interested in having one, I’m hosting a giveaway at my website. Thanks for posting these lovely photos and delicious recipes. It’s just what my cold body is craving. :)
