Snack Smart in 2012 (and a giveaway)

It’s week two of New Year, New You and this week’s theme is Snack Smart. If you’re in need of some healthy snack inspiration, you’ve come to the right place! Swing by Lexie’s Kitchen today, too, for her mouthwatering recipe for Sticky Toffee Power Balls.

Snack Smart

I’m a big advocate of eating nutritious snacks throughout the day. Snacks help keep cravings at bay, maintain stable blood sugar, and prevent that famished feeling we can get before a meal that causes us to overeat or make unhealthy choices.

These Fruit & Nut Breakfast Treats stretch well beyond breakfast in my house. Packed with fiber-rich nuts and seeds that also contain healthy fats, just one or two will keep you satisfied for hours.

Also rich in fiber and beta-carotene is this Spiced Carrot Hummus with Garlic Oil. Keep a batch in the fridge to enjoy all week long with veggies or rice crackers.

For a high-protein snack after a workout or when you find yourself craving sugary carbohydrates, try these Shredded Vegetable Meatballs. Lean turkey, zucchini, carrots, and parsley unite to create a nutrient-dense option that also travels well in lunchboxes and coolers. Pack a container of salsa or mustard for dipping.

This refreshing Stone Fruit Salsa is the perfect pick-me-up when you’re craving something sweet and juicy. If stone fruits aren’t in season or available where you live, try swapping in diced pears, mangos, pineapple, or tart apples. Serve the salsa with Homemade Tortilla Chips or your favorite cracker.

Last but not least, these Chocolate Raspberry Truffle Balls are sure to kick any pesky sweet tooth. Although they’re free of refined sugar, you’d never know it from the luscious chocolatey flavor.

  8. My favorite snack is apple slices with almond butter, but I try to make a special occasion, not an everyday kinda thing. But oh so yummy! Btw, I love love love the Go Raw Carrot Cake snacks. Tasty and tiny. Two great things together.

  19. Wow Hallie! I don’t have many snacks that I could call truly healthy like these. I do snack on my gluten free crackers and nut butters and veggie sticks with salsa and fruit too, but I am definitely putting these on my “to make list.” Last night I started making your raw pumpkin truffles from yesterday, but was limited for time so I haven’t got the chocolate on them yet. They are still in the freezer, and I will finish those up tonight when I get home. I will drop a note on the finished product. So far I love the taste.

    Thanks for the recipes and your New Year, New You event. Anything to help keep me eating healthy–a New Year. Could there possibly be a New Me?? Gotta love it!!

  20. My favorite snack for this Winter is a “Cutie” clementine. Easy to peel & sweet & tart!

  21. I tend to head towards the celery and almond butter or just a handful of raw nuts for my snacks. At least the healthy ones!

  22. The spiced carrot hummus recipe you listed is actually one of my FAVORITE go to snacks…or lunches! And…right now…quite addicted to avocado chocolate pudding with coconut oil in it, hmmmmm…there’s some into fridge chilling as i type for our dessert/snack later!

  23. I have some serious snacking to do with all the delicious, yet healthy recipes and ideas you ladies have come up with.

  24. Lately I have been popping organic popcorn in coconut oil on the stove, just adding a sprinkle of sea salt. If my sweet tooth calls, I melt some white chocolate and drizzle it over some of the popcorn – it sets up in the frig in a few minutes…

  25. For a quick snack, an apple and almond butter satisfies me. I have made two batches of the Fruit and Nut Breakfast treats this past week … an instant favorite for my husband! He would testify that they are not just for breakfast, but great all day long … thus the need to keep making them! :>) We also all love Simple Spice-Roasted Nuts and Peanut Butter Freezer Treats from Hallie’s cookbook “The Pure Kitchen.” No excuse not to eat healthy snacks when there are recipes like this around! Thanks so much Hallie.

  26. I focus on fresh fruits or veggies for snacks. It’s easy to grab a piece of fruit out of the fridge, especially when it’s pre-washed and waiting in a bowl for me.

  27. Cheesy Almond Crackers (adapted from a recipe on Wheat Belly blog): Mix together: 1/2 cup almond flour, 1/2 cup shredded cheddar cheese, 1 tsp baking soda, and 1 Tbsp chia seeds. Mix together 1 Tbsp egg white, 1 Tbsp Olive Oil, pour over and mix into dry ingredients. Spread onto cookie sheet lined with parchment paper – “smush” out with hands before topping with parchment paper so you can use rolling pin to flatten. We like them pretty thin. Remove top paper, bake at 350 for 8-10 minutes. Remove from oven, let sit for 30 minutes and then break into pieces.

    Our favorite thing to do is to freeze grapes. We get the sweetness that we crave and they are good for you.

  31. I have two young girls, so snacks are a necessity in our home! Some of our favorite healthy snacks that I love to make for our family are “Trail Mix” cookies, “Banana Sun Butter” protein bars, and “Granola Bars”! I also have a variety of raw veggies and fruit available along with some homemade hummus and yogurt for dipping.

    With five kiddos here at home, snacks come in large quantities! We love a Vitamix full of green smoothie, freshly extracted vegetable juice (of all sorts), a piece of fruit (per person, that is!), veggies with a homemade ranch dip made out of cashews, water and spices, or dried fruit and nuts – our favorite dried fruit being kiwi. Thanks for the great snack ideas – we loved your raw pumpkin truffles, but next time I will need to double the batch ;0) Stephanie

  77. I always keep healthy snacks on me because I’m always hungry! I pack containers of cut veggies (carrots, celery, green beans, peppers), plain raw nuts, and fruit (apples, apricots, plums). I also pack my lunch every day for work so I’m not tempted to eat out and get something unhealthy.

  90. My favourite snack is handsdown a super ripe banana with almond butter. I eat big meals though! If I ate smaller meals and had bigger snacks I would be a fan of cottage cheese, jam and flax (which I love having for breakfast!)
