Last week I started every one of my days with this green smoothie. The sweet creaminess, the icy cold texture…it made me feel like I was eating dessert for breakfast! What better way to start the day?
While it may taste rich and decadent, this smoothie is actually packed with all things healthy. Greens pack a giant nutrient punch with vitamins, minerals, fiber, and chlorophyll. Fruit strengthens the immune system (and just tastes good!) with vitamin C, more fiber, and antioxidants. And a bit of avocado supplies healthy fat that satisfies and lends creaminess to the smoothie.
The texture of this is thick enough to eat with a spoon, hence the “creamsicle” in the recipe title. If you’re worried that avocados along with fruit and greens sounds like a recipe for disaster, I encourage you to give this a try—just one try—and see if you change your mind. You really do not taste the avocado at all, or the mild greens for that matter. Trust me.

Green “Creamsicle” Smoothie - makes 1 creamy and delicious smoothie
1/2 medium ripe banana
1/2 cup frozen mango or pineapple chunks
1 cup mild greens such as baby spinach or mache
1 two-inch piece cucumber, peeled or unpeeled
1/4 of a ripe avocado
1/4 cup unsweetened almond or rice milk
1/4 cup water
Combine all ingredients in a blender and blend on high until smooth. Serve immediately.
